500g butternut, peeled  & diced

1 large Red onion peeled & quartered

1 small head of broccoli chopped into small pieces

200 grams of feta cheese

300g Quinoa, washed

600g vegetable stock

3 Tbsp olive oil

Herbs to taste (thyme, oregano, basil) chop finely

Seasoning

Preheat oven to 180c

Place butternut into roasting pan and pour in oil, mix add onion and bake till tender

Steam broccoli till tender.

Heat stock till boiling, add quinoa and boil for 10-12 mins, then take off the heat cover with a lid and allow to stand for 10 mins.

Combine all ingredients together, place into bowls and crumble feta on top.

Serve with toasted pita bread (optional)
