Salmon & bulghur wheatServes two

  • 2 100g fillets of salmon
  • 1/2 cup of bulghur wheat
  • 1 cup of broccoli chopped into bite size pieces
  • 1 cup of carrots chopped into bite size pieces
  • Handful of rocket leaves
  • 1 tsp each of parsley, mint, and dill chopped finely
  • 1 Tbsp of olive oil
  • Juice and zest of 1 lemon
  • 1 cup of water

Pre heat oven at 160c
Place salmon fillets in oven and roast till medium to well done.
Bring the water to a boil and add bulghur wheat , turn down and simmer for 5mins remove from heat with a lid on saucepan, leave for further 10mins to absorb any left over water.
Steam carrots and broccoli.
Add oil lemon juice, zest and herbs together mixing well.
In a bowl combine all ingredients (except salmon) and mix well.
Spoon desired amount onto plate adding salmon and enjoy!
